
Apple Raspberry Muffin Cups

About the Recipe
I had a few pieces of bread lying around and thought I’d make some little muffin cup pies. The bread asks like a crispy pastry ✨These are Insanely easy to make and absolutely delicious 👌🏻

Ingredients
Recipe: for 4 muffin cups
4 Heaped Tablespoons of Raspberry lemon chia jam (recipe on my website hopeandsaute.com)
1 large apple peeled & chopped
4 slices of bread cut into rounds & buttered on the outside (save the crusts for making bread crumbs)
1/4 tsp cinnamon
2 tsp coconut sugar
1 tsp butter
Dash of water
Dollap of yogurt (I used @cathedralcovenaturals vanilla coconut yoghurt)
Preparation
Preheat oven to 180c fan bake.
If you haven’t got chia jam (but also why haven’t you made it yet 😉) you can use just apples or add some frozen raspberries to the apples.
Place the chopped apples, coconut sugar, cinnamon, and a dash of water into a small pot and cook on low to medium until the apples are soft. Then add the butter and Saute until slightly golden.
Place your buttered bread round into lined muffin tins and push down into shape. Fill evenly with the apple filling & then put chia jam on top.
Place into the oven for approximately 25 minutes until the bread is golden. ( just keep an eye on them )
Then, take it out and leave it to cool slightly. Dollap with yoghurt or cream, and then dig in! So so good 💞
