Banana & Hemp Muffins

About the Recipe

Packed full of goodness and a nourishing addition to lunch boxes.

Full of protein, fiber and healthy fats like Hemps seeds & Avocado oil - To keep tummies feeling full, blood sugar levels stable and little bodies developing and growing well. Plus they are equally as good for us adults too! I've scoffed 3 already!

Ingredients

2 Very ripe Bananas mashed

2 Eggs

1/4 cup Milk ( I used Soy ) 1/3 Cup Avocado oil ( Or coconut oil melted )

2 Tbs Hemp seeds

1/3 Cup Maple syrup or 1/3 Cup coconut sugar - ( If using sugar use 1/3 cup Milk )

1 Cup Almond Meal

1 Cup Buckwheat flour

2 tsp Baking powder

1 tsp Cinnamon


( Extra hemp and cinnamon to sprinkle on top )


Preparation

Preheat oven to 180c Fan-bake.


In a bowl, mix together all the wet ingredients

( And sugar if you're using that instead of maple syrup ).

Then add the dry ingredients and stir until just combined.


Divide mixture into 8-10 Muffin cases.

And sprinkle with some extra hemp seeds and cinnamon.


Place into the oven and bake for approx 15-20 minutes until golden on top.

These can be stored in a container on the bench for 1-2 days or you can keep them in the fridge for a few days and these freeze well too.
