
BBQ Satay & Lime Skewers

About the Recipe
These BBQ skewers sing summer! With Thai flavours they are super flavourful and have bursts of coriander and lime. You'll be back for more. Serve with a fresh salad and your set for a gorgeous lunch or dinner. Enjoy!

Ingredients
500g Chicken breast or thigh chopped
2 Capsicums chopped into larger chunks
A bunch of fresh coriander chopped approx 1/2 cup
2 Limes ( 1 for the dressing and 1 for extra over the top )
Satay sauce:
1/2 cup Peanut butter
2 Tbs Olive oil
1 Lime juiced
1 TBS Tamari or Soy Sauce
1 TBS Maple syrup
Preparation
To make the satay sauce, place all the satay ingredients into a bowl and stir well until all combined.
Then, pour 3/4 of this satay sauce over the chicken and capsicum in a separate bowl and stir to coat all pieces.
Then, place the chicken and capsicum alternating onto the skewers. This recipe makes approx 6-8 skewers. *Alternatively, place the chicken and capsicum onto the skewers, then pour the satay sauce over them.
Then, place them onto a hot BBQ and cook until the chicken is thoroughly cooked through for approximately 8 minutes.
Then place the chicken on a serving plate, drizzle the remaining satay sauce over the top, scatter the coriander and sprinkle fresh lemon juice all over this gorgeous dish!

Tip:
I use stainless steel skewers, but if using bamboo ones please soak them before using them on the BBQ to prevent them from burning.
