I prepped this hummus on the weekend and it’s been paying dividends all week 😉 I put a big dollap on a sourdough bagel, braised garlicky rainbow beet & a squeeze of lemon.
It’s packed full of fiber, protein & phytonutrients for your body to soak up. And the colour is gorgeous it adds a pop of brightness to any dish or sandwich! And is a delicious dip.

Ingredients
1 can drained chickpeas
1-2 small precooked beetroots or 1/4 raw beetroot/ or roasted
1 garlic clove
1 TBS olive oil
1 TBS Tahini
Little squeeze of lemon
Good season of salt & pepper - I love @cornishsea_salt garlic roasting salt.
Preparation
Place all ingredients into a food processor or blender and blend until smooth & creamy.
Store in the fridge for up to 5 days in an air tight container.
