Black Sesame & Lemon Crumb Chicken Bites

About the Recipe

Quick, honest & very delicious!

A quick coat of this onto chicken, fish or vegetables & you’ve gone a delicous dish bursting with nourishing flavour.

Ingredients

1 cup almond meal

3/4 cup quinoa flakes/ rice crumbs / Bread crumbs

1 TBS Black sesame seeds

1/2 TBS onion powder

1 tsp Paprika

Zest of 1 lemon

Generous season of salt & pepper

Chilli flakes (if you like it spicy) 16 Chicken pieces / tenderloins

Preparation

Preheat oven to 190c.


Add all the ingredients to a bowl or deep dish.


Stir and coat each piece of chicken or fish on both sides. Press down so the crumb really sticks. For an extra crunchy coating, coat each piece of chicken, dip it into an egg wash, and coat it again with the crumb mixture.


Drizzle a baking tray with olive oil, place each piece of chicken onto the tray and drizzle more olive oil over the top.


Bake 190c for 20 minutes, then increase temperature to 210c for 5 minutes until golden!
