Buckwheat Crepes

Simple, nourishing and quick to make in the blender.

Ingredients
1 cup buckwheat flour
1/2 cup Soy or almond milk
3/4 cup water
2 eggs
2 tsp olive or melted coconut oil Toppings: Maple syrup
Lemon Juice
Cinnamon
Preparation
Put all the ingredients into a blender and blend until smooth.
It’ll be quite runny.
Heat your pan up, coat with coconut oil or ghee.
Tip out enough mixture in the middle of the pan approx 1/2 cup & tilt it in a circular motion so the mixture spreads thin and forms a thin crepe shape.
Wait until the crepe is completely cooked through (you’ll see the colour change - If you flip earlier the crepes with crack and fall apart.)
Flip over and cook for another minute until its slightly golden.
This mixture makes approx 6 large crepes
🍋Serve with maple & lemon and a dusting of cinnamon. Roll the crepes up & enjoy!
