Carrot & Walnut Cupcakes

About the Recipe

Friends these nourishing & deliciously moist Carrot & Walnut cupcakes were gobbled up today.

GF, DF & RS Free

Smeared in cream cheese icing or coconut yoghurt, I hope you love them as much as I do!

Ingredients

1 Large very ripe banana


1 cup finely grated carrot or or a chunky grate for more texture.


1/3 cup olive oil or melted butter


1/3 cup maple syrup


1 T coconut sugar


1/4 cup almond milk (or any milk)


2 eggs


1 1/2 tsp cinnamon


1/3 cup chopped walnuts


1 cup almond meal


1 cup buckwheat flour


2 tsp baking powder

Preparation

Preheat oven to 180c fanbake


Mix the wet ingredients together then add the dry ingredients.


Pour into lined muffin tins.


Bake at 180C for 30-35 mins or until cooked through.


When they are cooled dollap vanilla coconut yoghurt on top or cream cheese icing.
