Carrot cake with Matcha Lemon Icing

About the Recipe

This cake is so easy to make! It’s nourishing, moist and you’ll want more than one piece. The Matcha & Lemon icing is a nice twist on a classic too.

Ingredients

1 Large very ripe banana


1 cup finely grated carrot or or a chunky grate for more texture.


1/3 cup olive oil or melted butter


1/3 cup maple syrup


1T coconut sugar


1/4 cup almond milk (or any milk)


2 eggs


1 1/2 tsp cinnamon


1/3 cup chopped walnuts


1 cup almond meal


1 cup buckwheat flour


2 tsp baking powder

Preparation


Preheat the oven to 180C fan bake


Mix the wet ingredients together in a bowl then add the dry ingredients and stir until just combined.


Pour into lined cake tin 20x20cm


Bake for 35-40 mins or until *just cooked through. ( if you insert a skewer it should come out clean )


Leave to cool.


You can ice with traditional butter cream ( 1/4 cup butter softened and 1-2 cups icing sugar) add lemon zest from 1 lemon & 1-2 tsp matcha powder.


Or for non refined sugar try Monk fruit powder.@sheridanjoyaustin has a great icing/buttercream recipe.


Alternatively vanilla coconut yoghurt then add the zest of one lemon & 1 tsp matcha.


And a dusting of matcha on top too!
