Chewy Lemon granola bars

About the Recipe

Chewy, tangy, crunchy & will be a hit in lunchboxes too.
I love the classic combo of lemon & poppyseeds so wanted to combine that into a granola bar.

Ingredients

DRY INGREDIENTS


1 cup oats


1 cup almond meal


1/2 cup desiccated coconut


1 tbs chia, poppy seeds and ground flax


1/2 tsp turmeric powder


Zest of one large lemon



WET INGREDIENTS


1/2 cup coconut oil (or organic butter)


1/2 cup rice malt syrup (or maple syrup or honey)


2 tbs peanut butter - chunky or smooth

Preparation

Preheat your oven to 180c


Put all the wet ingredients into a pot and simmer on low for a few mins. It’ll be like a thick caramel! Yum



Mix all the dry ingredients in a bowl. Then pour the wet ingredients into this bowl and stir until all combined.



Place in a lined 20x20 slice or square cake tin and press the mixture evenly with hands or the back of a large spoon. Pop into the oven for 20-25 mins until golden.


Leave to cool then slice into bars approx 9 generous or 12 smaller bars. Keep in an air tight container at room temp or in the fridge for extra chewiness 🙂.
