Chocolate Cannellini Brownie

About the Recipe

Yup beans! And you can’t tell! Which is even better cause this brownie is full of protein & fiber.
It’s soft and squishy & decadent with pops of gooey dark chocolate.

Ingredients

1 can of Cannellini Beans drained


1/2 cup peanut butter


1/2 cup almond meal


1/4 cup cocoa powder


1/3 cup coconut sugar


1/4 cup almond milk (or any milk)


2 TBS mild olive or coconut oil


1 tsp vanilla


1 tsp baking powder


1 tsp cinnamon


Good pinch of salt


1/4-1/2 cup dark chocolate chopped or about 50g plus extra for the topping.

Preparation

Preheat the oven to 180C


In a food processor pulse the beans about 6 times until chopped.


Then add the remaining ingredients and blend until smooth and creamy. Stop to scrape the sides down.



Then take the lid off and add the dark chocolate and store through.



It’s a very sticky mixture! Scrape out into a 20x20cm baking tray and spread evenly. I find if I wet my hand or back of a spoon it’s spreads easier.


Top with extra chocolate!



Bake for 30 minutes. Let it cool slightly and serve warm. Store in the fridge to enjoy later on.
