Corn & Coriander Fritters (Gluten free )

About the Recipe

Packed full of goodness , 1 bowl & you’ll be munching on them in no time.

Ingredients

1 - 1 1/2 Cups of Frozen corn


1/2 cup finely grated zucchini


1/2 cup Almond meal


1/2 cup Buckwheat flour


2 tsp psyllium husk


2 tsp @norishnutrition Meal booster (optional)


Bunch of chopped fresh coriander , spinach or parsley


2 large eggs


1 tsp baking powder


3/4 - 1 cup Almond milk


1/2 cup grated cheese (optional)


And a good seasoning of salt & pepper.


I love @cornishsea_salt with garlic & thyme!

Preparation

Place all the dry ingredients in a bowl, then add the wet ingredients.


Heat a pan up on medium heat and drizzle with olive oil or ghee.


Cook on both sides until golden (approx 2 mins on each side ) and fluffy on the inside.



They can be stored in the fridge and reheated too.
