Crispy Tofu Salad

About the Recipe

If you’ve never tried tofu I dare you! This salad is just gorgeous especially in summer.
Tofu with a crispy golden outer, soft inside and it soaks up any flavour.

Ingredients

Crispy Tofu:

1 block Organic firm Tofu@tonzu.nz


2 TBS Tapioca starch


1 tsp paprika


2 tsp sesame seed oil


1 TBS Tamari or soy


2 tsp maple syrup


2 tsp bone broth powder (optional)@nutraorganics


1 small knob ginger finely grated


Black pepper


Black Rice


Water


Salad:


Red cabbage finely sliced approx 1/4 cabbage


1/2 Zuchinni Ribboned


1/2 Capsicum finely diced


And fresh chopped herbs - Mint, coriander & flat leaf parsley.


Peanut Dressing


3 tablespoons peanut butter


1 lime, juiced


1 tablespoon cider/rice wine vinegar


1 tablespoon maple syrup


2 tablespoons sesame oil


Pinch of sea salt

Preparation

Dry tofu block with a paper towel.


Chop Tofu and dust with the dry ingredients , stir then pour in the wet ingredients.


Gently fry In olive oil until golden and crispy all over.


Then get your black rice cooking. I used @ceresorganics


Black rice - ( I soaked this overnight in water - this optional but makes for a fluffier rice & reduces cooking time )


Cook as per packet instructions.


I added @nutraorganics bone broth powder too to add more goodness. ( This is optional or you could sub for vegetable broth )


While your rice I prepared the Salad.


( I used whatever I had in the fridge & they all had crunch )


Toss everything together in a bowl.


You can also add fresh chopped herbs - Mint, coriander & flat leaf parsley. Now time to make the peanut dressing.


Mix all the ingredients in a small bowl or jar and whisk with a fork until all combined.

When everything is ready assemble on a plate, with rice as a base, topped with fresh salad , then your tofu followed by that gorgeous peanut lime dressing!
