
Crock-pot Beef Curry

About the Recipe
Made the most delish veggie-loaded curry in the crock pot last night! 🌿🥕 Using simple ingredients, it was a breeze to prepare. The whole house smelled incredible, and the best part? It tastes even better the next day! Perfect for meal prepping or a cozy dinner

Ingredients
500g Beef chuck steak
1/2 leek finely chopped
1 can of Cherry tomatoes or chopped tomatoes
1 carrot sliced
1 packet / jar of Curry paste Water
1/3 cup Coconut cream
Salt & pepper
Basmati rice
Preparation
In a crock pot/slow cooker add the beef chuck steak to the bottom, then spoon over the curry paste ( Check packet or jar and use the recommended amount of approx 2 TBS ), cherry tomatoes, leeks and water approx 1/2 cup.
Place the slow cooker on high for 6 hours.
At the 6-hour mark, add the sliced carrots, taste and season. Pop the lid back on and cook for a further 30 minutes to an hour. The beef should be soft and tender and break apart with two forks and the carrots should be cooked too.
Break the steak up into pieces and stir through the sauce. Cook Basmati rice according to instructions.
Stir through the coconut cream and it's ready to serve!
I sometimes transfer the curry to a pan and heat it medium to high to help it thicken up if it's runny.
Season again if need be. It is lovely served with crunchy poppadoms and fresh coriander.
