About the Recipe
Golden and crunchy Tofu makes for a perfect side dish, on top of pad thai style noodles, with rice and a gorgeous peanut satay dressing, in a wrap/burger or even on a salad.

Ingredients
1 Block of Organic Tofu
2 eggs
1 Tbs Almond milk
1 tsp Paprika
3/4 cup Almond meal
1/2 cup Quinoa flakes
Generous season of Salt & Pepper - I love Cornish sea salts Roasted garlic salt
Preparation
Peheat oven to 200 C fanbake
Cut Tofu into any size pieces you like.
Dab dry with a paper towel
Crack the eggs in a bowl , add the soy, season and whisk to make an egg wash.
In another bowl stir all the dry ingredients together
Dip each piece of tofu into the egg wash to coat all over and then dunk into the dry mixture to coat evenly. Do this with each piece of tofu and lay them out onto a baking tray drizzled with olive oil.
When all the tofu is layed out drizzle again with olive oil.
Bake for approx 20-25 mins or until golden and crunchy ( I turn my over half way through cooking )
When done season again with salt and pepper and enjoy.
