Curried Hash & Eggs

About the Recipe

The word “hash” comes from the French word “hacher” which means “to chop”. Essentially hash is a combination of chopped or diced meat, potatoes, and spices.

Here’s my version! Save & enjoy

Ingredients

2 potatoes diced


1/2 onion finely sliced


Bunch of rainbow beet, silver beet or spinach chopped


Bunch of fresh flat leaf parsley chopped and/or dried herbs


1 garlic clove finely chopped


1 tsp curry powder


Chilli flakes (optional)


Salt & pepper


2-4 eggs

Preparation

Placed your diced onion & potato in a pan drizzled with a generous amount of olive oil.


Sauté until the onions are almost soft then place approx 100mls water into the pan and place a lid on top. When the water has evaporated take the lid off and the potatoes should be tender. If not add a bit more water and place the lid back until they are cooked.


Then sprinkle the curry powder on top and fry the potatoes with along with the chopped rainbow beet and parsley & garlic in a bit more oil until they the potatoes are getting golden.



Then crack your eggs in the pan. Put the lid back into for 2 minutes until your eggs and cooked but still runny.



Season the dish with salt & pepper. Even a dash of chilli flakes and enjoy!
