Fluffy Banana Pancakes

Fluffy as! Fresh baking powder will do that 😉
I change my baking powder regularly as it’s potency decreases over time. This ensures fluffy baking!

We love these! Great with a big dollap of Raspberry chia jam, coconut yoghurt or maple & honey.

Ingredients

1/2 almond meal


1/2 cup buckwheat flour


1 ripe banana


2 eggs


1/2 cup almond milk


1 tsp baking powder


1 tsp psyllium husk

Preparation

In a bowl mash the banana then add the wet ingredients and stir until combined.


Then add the dry ingredients and stir.



Heat your pan up and dollop big spoonfuls of the mixture (makes approx 8 smaller or 6 larger mini pancakes).



Cook on one side until bubbles form then flip to cook the other side.



Voila - super simple and will tummy’s full!
