
Fudgy Chocolate Peanut Butter Muffins

About the Recipe
We gobbled these up this afternoon wishing I’d made more.

Ingredients
Muffins: 2 Ripe bananas mashed
1/3 cup maple syrup
2 eggs
1/3 cup Avocado, olive or coconut oil
1/2 cup Cacao powder
1/2 cup Buckwheat flour
1 cup Almond meal 2 tsp Baking powder 2 Tbs Milk ( I used Oat )
Peanut butter paste: 4 Tbs Crunchy peanut butter ( I used Fix & Fog )
2 tsp Cocoa powder
4 tsp Maple Syrup 1/4 cup Milk ( I used oat ) Cacao nibs for sprinkling on top
Preparation
Preheat oven to 180c Fanbake. In a bowl mash the bananas roughly then add eggs, oil, maple and milk and stir.
Then, sift the dry ingredients over the top and stir to combine.
In 10 muffin cases half fill them with the muffin mixture. Then dollop the Peanut butter paste evenly into the middle of each muffin.
Then, top with the remaining muffin mixture. Sprinkle with cacao nibs and bake for 20 mins until fluffy and cooked through the middle.
