Whip this up in under 15 mins! Yup… Caveat/Tip: The Rice & Quinoa has been cooked & cooled the day before.
A study done in 2015 that showed Cooling of cooked starch (Rice for example) is known to cause starch retrogradation which increases resistant starch content.
Cooked white rice cooled for 24 hours at 4°C then reheated lowered glycemic response compared with freshly cooked white rice. ( So blood sugars didn’t spike as much as eating freshly cooked rice ).
Resistant starch is a carb that is also considered a type of fiber!
Increasing your intake of resistant starch can be beneficial for the bacteria in your gut & as well as for your cells.

Ingredients
3 cups cooked and cooled Rice ( I also added quinoa to mine for extra protein)
1 big knob of fresh ginger finely grated
1 garlic clove finely diced
1/2 small onion finely diced
Big bunch of spinach finely diced
Freshly cooked corn approx 1 cob then kernels sliced off the cob.
2 eggs
2 TBS Tamari or soy sauce
2 TBS Hemp seeds
1 tsp stock powder or bone broth powder
1 tsp sesame oil
2 tsp olive oil
Salt & pepper to season
(Optional adds : Protein like Tofu, chicken. Peas, carrot, capsicum)
Preparation
I get the corn steaming in a pot of water or you can give the cob a wash, keep the skin on but take the first layer of leaves off and microwave on a plate for 3 mins on high. Then with a knife slice off the kernels and keep aside for later.
Gently sauté the diced onions, garlic & ginger in the oils until soft.
Then add your optional protein : diced chicken or tofu until golden and cooked.
Then add your rice, spinach, bone broth/stock powder and corn and stir until rice is hot & getting slightly golden. I add a dash of water to help steam the rice and break it up.
Then add the hemp seeds stir and then make a little area on the side of the pan to crack 2 eggs into and give them a stir then toss through the rice. Sprinkle the tamari over the top and a good grind of pepper. Taste! Does it need a dash of salt or more tamari.
