Raspberry & lemon Chia Jam

Ingredients

2 Cups Frozen organic Raspberries


1/2 Cup Frozen organic Mango 1-2 Tbs Maple Syrup


3 Tbs Chia seeds


Squeeze fresh lemon juice


Preparation

Place the raspberries, mango and maple syrup into a small pot and simmer on low heat for about 3 minutes until the fruit has softened and the mixture is starting to bubble slightly. ( You can mash the fruit with a fork or back of a spoon to help it break down )

I'll start to look jammy and smell delicious.


Take off the heat and stir through the chia seeds.


Wait until the mixure has cooled slightly approx 5 minutes then add your squeeze of lemon juice.


Once the mixture has completely cooled transfer to a glass container and store in the fridge for up to 5 days.


It's lovely on pancakes, porridge, overnight oats, toast, french toast, crackers or even off the spoon.
