Raspberry honey-mint Rollups

About the Recipe

These Rollups are a fun addition to a lunchbox & a nourishing snack!
Natural Gelatin powder is so versatile & provides collagen protein with key amino acids for tissue building, repair and a happy gut! Paired with vitamin C and fiber from the raspberries and chia - it’s a favourite snack!
Much like my Jelly recipes too.

Ingredients

2 Cups frozen Raspberries

Dash of water

1Tbs Chia seeds

1-2 Tbs Honey

Squeeze of lemon juice

2 Tbs Gelatin ( @nutraorganics )

2 Large fresh Mint leaves

Preparation

Place the raspberries in a small pot with a small dash of water.

Simmer on low until all the raspberries have broken up ( 3-4 mins).

Place gelatin in a small cup with 4 Tbs water and leave it to bloom (it goes all puffy ) for a few minutes. Once it's bloomed, put this into the pot with the raspberries, add chia seeds, and put it back onto low heat, stirring until all the gelatin has dissolved completely. Take off the heat, add the honey & lemon juice and stir.

Then, leave to cool for 10 minutes. Add the mint, transfer the contents to a blender, and puree.


Transfer this gorgeous puree onto a baking sheet and spread out evenly. You want it to be a few mls thick.


Leave to cool completely ( it'll start to set ), then transfer to the fridge for 2 hours or overnight.


When it's ready, slice into strips and roll them up!


Keep them in an airtight container in the fridge for up to 5 days.
