About the Recipe
Making food from scratch ignites me - Just like this Roasted Tomato & Capsicum Pasta Sauce 🍅
🌱Bursting with flavour. And look at that colour.
No additives or preservatives in this sauce!

Ingredients
2 punnets of fresh tomatoes (cherry will be sweeter)
2 red capsicums (bell peppers)
3 cloves garlic
2 big sprigs fresh Oregano or Basil
Extra virgin olive oil - a drizzle over veges
Salt & Black pepper to taste
Preparation
Heat the oven to 180 degrees C.
Place all the ingredients in an oven proof dish. Chopping is optional.
Roast for approx 20 mins until the tomatoes have burst open and capsicum has softened.
Let cool slightly and then place all ingredients into a blender and blend until your happy.
Season to taste. You may like a dash more salt & pepper.
If it’s quite acidic (depending on your tomatoes) you can add a small splash of balsamic or pinch of sugar to balance the taste.
Sprinkle some more fresh herbs on top.
Then fold through your fav pasta.
I used quinoa pasta. But equally yummy as a sauce for your lasagne, nachos or pizza!
