
Smashed Avocado on Cassava Flatbreads

About the Recipe
A plant based lunch or brunch that'll love you back.

Ingredients
1 ripe Avocado - Smashed up with a fork
Squeeze of Lemon,
Seasoning of salt, pepper & Dried chilli ( optional )
Bunch of chopped coriander or flat leaf parsley.
And a dollap of pesto 🌱
Cassava Wraps - 1 cup cassava flour
2 T olive oil
and some warm water until I got a nice dough consistency. Approx 1/3 cup
Preparation
Cassava wraps -
Place all the ingredients except the water into a food processor and pulse for about 6 times.
Then turn the food processor back on low and slowly pour in your warm water until it forms a soft dough. If the dough is not coming together or doesn't feel like soft playdough when you touch it try adding a a Tablespoon at a time of more warm water.
Roll your dough out onto baking paper. I lay baking paper on the kitchen bench place my dough down and lay another piece on top. This stops it from sticking and drying out.
Roll until its about 3mm thick.
Then place in a warm - hot pan drizzled with olive oil and cook until golden on both sides. You may see it starts to form bubbles - This is totally normal and a good sign.
Avocado smash -
I a bowl smash the avocado with a fork, add a good squeeze of lemon juice, season generously and transfer the avocado smash onto each cassava wrap. Then top with pesto, chili flakes and fresh herbs.
