About the Recipe

This honey soy chicken really is morish. An elevated take on a classic. The sauce is beautiful drizzled over rice too. They'll be gobbled up and i'm sure will become a family favourite. Enjoy

Ingredients

8 Chicken Drum sticks ( 2 each - But more if you're hungry ) 1 Medium Leek finely chopped

1/2 cup water

2 Tbs Avocado or olive oil

1 TBS bone broth ( I use Gevity rx populate bone broth glue ) Or you could use stock, powered broth or 1 TBS Miso paste.

2 TBS Tamari or Soy

1 TBS Honey ( I used Manuka )

2 cm Piece of freshly grated ginger

Good season of pepper

Preparation

In a pan add the oil and leeks and saute them for a couple of minutes on medium heat, then add a dash of water and pop a lid on for a further couple of minutes. Take the lid off and place the chicken drumsticks on top of the leeks and cook for 5 minutes until the drumsticks start to take on some colour.

Then add the water and place the lid on; cook chicken for approx 10 minutes.

Take the lid off and add the bone broth, tamari and honey.

Continue to cook for a further 5 minutes while coating the chicken in the sauce. The sauce should be beautiful and glossy and the chicken cooked right through to the bone. ( If the sauce is getting quite thick you can add some more water to loosen it up ). Season with pepper and do a little taste test to see if it needs any further seasoning.

Serve with steamed rice & your favourite vegetables or even a crunchy salad. I love to spoon the jus over the rice! Its very morish.

Enjoy! * Notes : Gevity rx bone broth is packed full of flavour and already contains salt. If you are using a powdered bone broth or stock check the flavour at the end and adjust the seasoning to your liking. It may need a good pinch of sea salt or a dash more tamari.
