About the Recipe

It’s gluten free & can be dairy free (see subs below).
This serves 2-4 people

Ingredients
1/2 Leek chopped finely
1 carrot grated
2 Tbs bone broth powder - I used @nutraorganics or you can use stock powder but these tend to be stronger so check the measurements for approx 2 cups worth when mixed with water eg: 2 tsp)
2 tsp mixed herbs
1 tsp paprika
Water
1 1/2 - 2 cups Soy/almond milk
1/2 cup grated Parmesan or 1/4 cup nutritional yeast flakes
2 Brazil nuts finely grated (optional)
Fresh herbs - I love flat leaf parsley or coriander chopped
A good season of Salt and pepper
40grams butter or 3 Tbs olive oil
4 Tbs rice flour
1-2 packets of quinoa pasta
Preparation
Drizzle olive oil in a pan and add the chopped leeks, grated carrot, mixed herbs, paprika & bone broth powder or stick. Mix and sautee on medium for a couple of minutes then add approx 1/2 cup water and cover with a lid until the veges are becoming tender.
In another pot, get some water boiling and cook your pasta as per instructions.
While the pasta is cooking, check your vegetables, and when the water is almost dried up, add the butter & rice flour and stir until everything is coated. Then slowly start to add your soy/almond milk. Keep stirring to prevent lumps. You may need more milk if it’s too thick. Finely grate the Brazil nuts into the sauce and gently cook on low/medium heat and keep stirring while it bubbles. You want the rice flour to cook out to give a creamy texture. 5-7 minutes approx.
Then add in the Parmesan cheese, season with a generous amount of salt & pepper & stir until the cheese has melted.
When your pasta is cooked, drain the water off and add the pasta to the cheesy sauce.
Taste - does it need more salt & pepper?
Serve and top with extra cheese and fresh herbs, even some crispy bacon! Yum.
