Vee's Chicken Parmigiana

About the Recipe

This will be your new favourite family meal. It's simple to make , nourishing and delicious. This was inspired by a beautiful box of organic goodies from Ceres Organics. Happy Organic Week!

Ingredients

1 Cup almond meal

1/4 cup quinoa flakes ( optional )

20 Ceres organics small rice crackers

1 tsp mixed herbs

1/2 tsp Ceres organics kelp salt or himalayan salt

Good grind of black pepper

1-2 large chicken breasts

4-8 TBS Ceres organics Passata Sauce Grated cheese / Parmesan - As much as you like

1 Jar of Ceres organics pesto

1 packet of Ceres organics Quinoa Pasta 1 Egg 2 TBS Milk ( I used Soy )


Preparation

Preheat oven to 180 degrees C.

Place the almond meal, quinoa flakes, rice crackers, mixed herbs, and salt/pepper in a food processor or blender. Whizz until you get a fine crumb, then place the crumb in a shallow dish or plate.


Slice your chicken breast lengthways (horizontally) through the middle and open it up into a butterfly shape. Take each breast and cover with baking paper. Using a mallet or rolling pin, firmly hit the chicken until it's approximately 1/2 cm thick.


Place 1 tsp of pesto onto each breast and spread evenly.


Then, in a bowl, add the egg and milk and whisk until combined.

Dip the chicken breasts into the egg wash, then into the crumb mix and coat entirely on both sides.


Place chicken on a baking tray and bake for 15 minutes. Get a pot of boiling water and cook pasta according to instructions while the chicken is cooking.


Then, take the chicken out, turn the oven temperature up to 200 degrees C, spoon 4 TBS of Passata onto each breast, and top it with the desired amount of cheese.

Place back into the oven for 10 minutes until the cheese is golden and bubbling.

Chicken should be cooked through (the internal temperature of the meat to ( 74˚C).

While that's cooling slightly, drain your pasta. Spoon the pesto onto the pasta and stir. If it's a bit sticky, add some olive oil or a little water to loosen it up. Then, Slice your chicken parmigiana and stack it on top of the pasta. Serve along with vegetables of your choice or a crunchy salad! Enjoy :)
