About the Recipe
Hello all those vegetables lying round in your fridge. You’re going to make delicious pakoras!
A quick nourishing lunch, brunch or dinner and uses all those scrap veges you have lying round your fridge. We all have them 😉
🌱Serve with salad, a fried egg, yoghurt raita or on their own.

Ingredients
1/2 finely diced leek
8 green beans finely sliced
1/2 capsicum finely diced
Bunch of Coriander chopped
1 tsp curry powder or paprika is lovely too 1 tsp mustard or cumin seeds
2 tsp bone broth powder (optional)
1 cup chickpea flour
1/2 cup warm water
Generous amount of salt and pepper
Preparation
Sautéed the leeks and mustard/cumin seeds in olive oil for a few mins until soft.
Then add these & the rest of the ingredients to a bowl and stir until all the vegetables are coated. Start with 1/2 cup water and more if the mixture is to dry. It should be quite a thick mixture.
Heat your pan up to medium heat, drizzle in a generous amount of olive or avocado oil and dollap mixture into 6 Pakoras.
Cook until golden approximately 3-4 minutes on the first side, then flip to cook the other side until golden. (approx 6 mintues in total )
Once golden all over transfer to a plate covered in a paper towel to drain any excess oil and enjoy!
Have them on their own or with a crunchy salad with lots of coriander, a yoghurt raita or a delicous fried egg spinkled in chilli flakes.
